Warm temps, rain and a real great one-pan chicken recipe

Good Morning Augusta

This morning we have mostly cloudy skies and fog. There remains a chance of drizzle throughout the morning followed by a chance of rain showers. Highs will reach into the low 50’s. 

Tonight we’ll have clouds with a 50 percent chance of showers. Lows in the upper 30s and we’ll have light and variable winds.…

Below is yet another chicken recipe, but this is a meat that leans to the low end of fats and cholesterols. Hey, summer is coming, and you want to fit in that swim suit, right?

ONE-PAN POTATOES AND CHICKEN

4 servings

Prep:  10 min. Cook: 20 min.

2 tbsp vegetable oil

8 medium red potatoes, thinly sliced

1 lb boneless, skinless chicken breast halves, cut into thin strips

1 medium red bell pepper, cut into thin strips

1 tsp garlic salt

Heat oil in 12-inch nonstick skillet over medium heat.  Add potatoes, chicken and bell pepper to skillet.  Sprinkle with garlic salt.  Cook 15 to 20 minutes, stirring frequently, until chicken is no longer pink in center and potatoes are tender.  Let your imagination run wild by trying different potatoes for new flavors and colors.  Choose Yukon gold, purple, yellow Finnish or Texas finger potatoes.  Sprinkle this dish with sliced green onion to add a little color.  Chopped fresh basil or parsley would also add great eye and flavor appeal.
