How about a seafood stir-fry for a change of menu?
STIR-FRIED SEAFOOD
Serves: 6—3/4 cup
Vegetable cooking spray
1 medium-size red or green pepper, coarsely chopped
8 green onions, cut into ½ -inch slices
1 clove of garlic, minced
1 cup diagonally sliced celery
1 (8-oz.) can sliced water chestnuts, drained
5 oz. fresh snow pea pods
2 oz. fresh mushrooms, sliced
1 tbsp. cornstarch
3 tbsp. reduced-sodium soy sauce
3 tbsp. water
1 tbsp. vinegar
¼ tsp. ground ginger
6½ oz. packages of scallops, crab, lobster, and/or shrimp
- Coat a wok or large, heavy skillet with cooking spray; heat at 325 degrees for 2 minutes. Add 1 pepper, 8 green onions, and 1 clove garlic; stir-fry 15 seconds.
- Add 1 cup celery, 8 oz. can water chestnuts, 5 oz. snow peas, and 2 oz. mushrooms. Stir-fry 1 minute or until vegetables are crisp-tender.
- Combine 1 tbsp. cornstarch, 3 tbsp. soy sauce, 3 tbsp. soy sauce, 3 tbsp. water, 1 tbsp. vinegar, and ¼ tsp. ginger, stirring until dissolved; add to wok. Cook over high heat 350 degrees, stirring frequently, until sauce is slightly thickened. Add seafoods stirring to coat well.
NOTE: Stir-Fried Seafoods may be served over hot cooked rice that has been cooked with salt or fat.
