#MEwx Still cold with sun and a Jambolaya recipe that's fantastic!

My Personal Weather Station in  Augusta’s North end is reporting conditions in real time here for your convenience.

This morning we have mostly sunny with highs in the mid 30s. West winds around 10 mph.

Tonight it will be mostly clear with Lows around 13°F. Northwest winds around 10 mph this evening, turning light and variable.

The Relative pressure is 30.09, the Absolute pressure is 29.88 and rising with a weather graphic indicating sun.

Visibility is 10.0 miles / 16.1 Kilometers with clear skies.

The UV rating is 1 out of 16, Sunrise is 6:46 A.M., Sunset is 6:48 P.M., Moonrise is 3:53 P.M., Moonset is 5:37 A.M. and the moon phase is waxing gibbous being 90% illuminated.

Miss Lil’s Jambalaya

Bob the Chef's/Miz Lil's Jambalaya: 

1/2 lb margarine

2 lb smoked beef sausage

2 c. chopped onions

2 c. chopped celery

1 c. diced red pepper

2 c. chopped canned tomatoes

2 lb diced boneless chicken

1.5 lb shrimp (P&D)

2 tbsp crushed red pepper

4 tbsp Cajun seasoning

2 c. tomato puree

1/2 cup dry chicken base

3 c. rice (uncooked)

3 c. water 

Sauté onions, celery, peppers, chicken, and sausage in margarine for 10-15 minutes.

Add seasonings, tomatoes, and tomato puree.

Continue to cook for 5 minutes more.

Add rice and stir until mixed well.

Add chicken base and water.

Bring to a boil for 20-25 minutes.

    Most of the water should be absorbed and the rice should be a little moist.

Add shrimp, cook only until shrimp is done (takes only a few minutes). 

Yield: 8 lbs.

(I’d put some good bourbon in it myself)
