PASTRAMI DELI FOLDS

6 servings

1 pint (2 cups) deli coleslaw (creamy style)

1 tbsp prepared horseradish

1 to 2 tsps grated leamon peel

1 lb sliced turkey pastrami

2 small red bell peppers, cutting ¼” strips

1 bag (15 oz) pita fold breads

Mix coleslaw, horseradish and lemon peel.  Arrange pastrami, coleslaw and bell pepper on half of each pita fold bread; fold over.  

These sandwiches can be modified for kids who like simpler foods.  Omit the coleslaw and bell peppers, and substitute lettuce leaves and perhaps a thin slice of tomato.  Spread the pastrami with a favorite sandwich spread.
