Cool wet and wintery today: Turkey Leftovers

Good morning Augusta

This morning we have rain and snow then overcast for the afternoon. High 39ºF. Winds from the NNW at 10 to 15 mph. Chance of precip 40%.

Tonight we’ll have Mostly cloudy skies early, then partly cloudy after midnight. Low 28ºF. Winds WNW at 5 to 10 mph.

TURKEY JAMBALAYA

Serves 4 to 6

1 (15 oz) can stewed tomatoes, undrained

1 package vegetable soup & dip dry mix

¾ tsp crushed red pepper

2 cups chopped turkey

1 cup ham, cut into matchsticks

2 Cups Water

In a large skillet, combine the 15 oz. can of stewed tomatoes, 2 cups of water, one package of vegetable soup/dip mix and ¾ Tsp red pepper. 

Bring to a boil, stirring well.  Reduce heat, cover and simmer for 15 minutes. 

Stir in the 2 cups of chopped turkey; cook 5 minutes longer. 

Serve over some hot wild, cooked rice.

 

For dessert: Strawberries Romanoff

1 quart fresh whipping cream

2 quarts fresh cleaned and sliced strawberries

1/2 cup sugar

1 cup strawberry Schnapps

1/4 cup white chocolate shavings

 

First, warm up the Schnapps

Add the strawberry slices and let set a couple of minutes.  Meanwhile, whip up the cream in a medium bowl with the sugar until you have stiff peaks. 

Next, soften up a half gallon of French Vanilla ice cream and whip it together with the whipped cream mentioned above. After well- mixed

begin to layer into a large bowl the Strawberry mix on successive layers of ice cream/whipped cream, then sprinkle shaved white and dark chocolate on top.  

 

(this is NOT what one would call a “healthy” dessert. But who cares!)
