We received 0.04 inches of rain here over the past 24 hours.

Here is another set of recipes for leftover turkey.  The desserts aren’t turkey, but you need something to soften the blow of disguised turkey, right?

TURKEY BROCCOLI CASSEROLE (Hey, it gets rid of some more turkey, and dessert makes it worth it)

Serves 6 or 8

1 can cream of chicken soup

¾ cup nonfat milk

3 cups diced cooked turkey

1 (10 oz) box) frozen broccoli spears, thawed

1 (16 oz) box stuffing mix (prepared according to directions) OR use 8 to 10 cups of leftover dressing

Heat soup and milk, just enough to be able to mix well.  Pour into a greased 9” x 13” baking dish.  Layer turkey over the soup; layer the broccoli on top.  Top with stuffing or stuffing mix.  Bake covered at 350 degrees for 50 minutes.

And for dessert how about:

CINNAMON ROLL WHOOPIE PIES

Bake refrigerated cinnamon rolls (like Pillsbury) as directed on package (at 375F 10-12 min. or at 350F if using a dark baking sheet), placing each roll separately on a baking sheet (not close together as the can directs).

When cool, slice in half horizontally.

Fill with cinnamon cream cheese filling, or a cinnamon buttercream filling.

Drizzle with glaze from the can of dough.

And/Or:

Cinnamon Cream Cheese Buttercream Frosting

Ingredients

·         2 cups (4 sticks) butter, slightly softened

·         7 cups powdered sugar

·         1 (8 oz) package cream cheese, softened

·         1 teaspoon vanilla

·         2 teaspoons cinnamon

Mix all ingredients until smooth.  Fill cinnamon rolls (a mini scoop works well).  For one tube of rolls, I found that one quarter of the filling was enough.  Larger rolls might take more.

(No, you aren’t gaining weight.  It’s your clothes dryer.  Your pants are shrinking.)
